This Amalfi Oven has a 80×50 cm cooking chamber. It has a practical painted steel trolley with wheels. Also provided with the oven is a wood-holder plate, flue pipe with adjustable smoke exit valve and chimney top. It has a closing door for the cooking chamber. The fire surface is made of high quality refractory chamotte. Perfect for food use. Furthermore, the internal structure is in stainless steel with paints that withstand high temperatures for the maximum resistance to heat, weather and rust. In addition, the cooking chamber consists of natural rock wool which allows to maintain temperature more efficiently and to avoid that the external structure becomes to hot.
The unique cooking chamber – domed back-to-back and side-to-side — eliminates hot spots and ensures uniform heat distribution. The innovative design allows smoke to exit even when the door is closed for maximum heat retention and consistent cooking temperatures.

This oven is amazing! Takes a little mastering finding your best practices, don’t be getting this if you have not got your pizza making skills started at least. The fire guard / starter I use at the back corner to provide a rest for new logs to go on mid cooking so they have some air underneath to fan the flames.
The stones really hold the heat, use the door when building the fire to get the heat up inside the oven, once you are cooking no need for it.
Technically you could do 2 pizza’s at the same time, i find one is enough for me for now as it would be a bit tight, could do two small ones, people will wait for the next pizza I find though, don’t be rushed by hungry people.
Usually do a batch for 6-10 pizza’s, any leftover ones are cooled and then frozen and vacuum packed for a nice lunch sometime
Now…..there is still heat in there, once the firs has calmed down a little, scrape the beautiful burning embers over the oven, place a raised cast iron grate over them, once warmed up cook your kebabs / steaks / chops/ fish on them. There is nothing like wood fired cooked meat. Can even do some roast veg off to the side in a pan or tray just be careful with the heat.
Don’t forget to take time to enjoy the pizza’s as they come out as your friends will not leave you any scraps!
